Grilled Lemon Garlic Chicken Skewers

Grilled Lemon Garlic Chicken Skewers

Lemon Garlic Chicken Kabobs...from the kitchen of One Perfect Bite adapted from a Williams Sonoma recipe

Ingredients:
Chicken ( I used 3 large breasts and cut them into 3 long strips) 
1/3 cup extra-virgin olive oil
Zest of 1 lemon
2 tablespoons minced garlic ( 4 Cloves minced) 
2 tablespoon minced fresh flat-leaf parsley
2 teaspoon kosher salt, plus more, to taste
1 teaspoon freshly ground pepper, plus more, to taste

Directions:
1) To prepare chicken: In a bowl, whisk together olive oil, lemon zest, garlic, parsley, salt and pepper. Add chicken and stir to combine. Cover bowl with plastic wrap and refrigerate for at least 2 hours or up to 8 hours.
2) To prepare grill,skewers: If using wooden skewers, soak them in water to cover for at least 20 minutes. ( mine still caught on fire, even after soaking them.) 

4) To grill: Lay skewers grill.  Close lid and cook until chicken is opaque throughout 8 to 12 minutes. Transfer skewers to a warmed platter and serve immediately. Yield: 4 servings.


For 21 Day Fix, this counts as a RED container and 1 TEASPOON for the oil. I don't count it as both teaspoons, because most of the marinade stays in the container and the amount you actually eat for a serving is not a lot.

  2. Is one skewer considered a serving? When you say you cut 3 breasts into 3 strips did you have 9 skewers total?

    1. I am sorry for such a delayed response, this recipe is 4 servings. It has been a long time since I made it. I am pretty sure it was 9 skewers.
